I ran an image on Midjourney V8.1 on another site (second image for reference) and then enhanced for definition and depth in GPT (first image). The difference is subtle, but I feel makes an overall better image. Thoughts?

Agree the first is a better image. Did you go GPT 2 Low and just prompt "Enhanced for definition and depth" ?
